Preheat oven to 375°F. Line a large baking sheet with foil or parchment for easy cleanup.
Brown the ground meat (beef, turkey, pork, or tempeh substitute) in a skillet with salt, pepper, and optional cumin or chili powder. Drain excess fat and set aside. Warm the beans separately if using canned.
Slice jalapeños and dice red onion or green onion. Have all toppings ready: salsa, sour cream, cilantro, and lime wedges.
Spread tortilla chips in a single layer on the prepared baking sheet. Distribute cooked meat evenly over the chips.
Scatter cooked beans and sliced jalapeños over the meat. Sprinkle shredded cheese generously over the top layer.
Bake for 8–10 minutes until cheese is melted and bubbly. Watch carefully to avoid chips becoming too dark.
Remove from oven and immediately dollop sour cream and salsa over the top. Sprinkle with diced red onion, cilantro, and lime juice. Serve hot with lime wedges on the side.
