Ingredients
Method
Bring a large pot of salted water to boil. Slice salmon fillet into two equal portions if cooking for 2 servings, or keep whole for 1 serving.
Cut broccoli into bite-sized florets and slice bell pepper into thin strips. Separate white and green parts of green onion; slice thin.
Add soba noodles to boiling water and cook according to package directions, usually 4–5 minutes. Drain and set aside.
Heat 1 tbsp sesame oil in a large skillet over medium-high heat. Place salmon skin-side up and sear for 3 minutes. Flip and sear another 2–3 minutes until golden and cooked through. Transfer to a plate.
Add remaining 1 tbsp sesame oil to the same skillet. Stir in minced ginger and garlic; cook for 30 seconds until fragrant.
Add broccoli florets and bell pepper strips; stir-fry over medium-high heat for 3–4 minutes until tender-crisp. Add white parts of green onion and soy sauce; toss to coat.
Return salmon to the skillet and pour teriyaki sauce around it. Gently toss noodles into the pan with vegetables, coating everything lightly with sauce. Cook for 1 minute until warmed through.
Divide noodles, vegetables, and salmon between bowls or plates. Sprinkle sesame seeds and reserved green parts of green onion over the top. Serve immediately.
