Teriyaki Tofu Noodle Bowl
A warm noodle bowl with glazed tofu, soba or rice noodles, and stir-fried vegetables bound in teriyaki sauce. Soft tofu cubes and tender vegetables are tossed with noodles and finished with sesame seeds and green onion.

Press tofu between paper towels under a light weight for 10 minutes to remove excess moisture, then cut into 1-inch cubes.
Bring a medium saucepan of water to a boil and cook soba noodles according to package directions until tender; drain and set aside.
Heat sesame oil in a large skillet or wok over medium-high heat; add the white parts of green onion, ginger, and garlic and cook for 30 seconds until fragrant.
Add tofu cubes and cook for 3–4 minutes, stirring gently, until the edges are lightly golden.
Add zucchini and bell pepper; stir-fry for 3–4 minutes until vegetables are tender-crisp.
Pour in teriyaki sauce and cooked noodles; toss together over medium heat for 2 minutes until fully combined and heated through.
Divide between bowls and top with sesame seeds, green parts of green onion, and red pepper flakes if desired.
