Thai Basil Ground Turkey

Mince garlic and ginger. Dice red onion. Roughly chop Thai basil leaves. Dice bell pepper or other vegetable if using. Combine fish sauce, lime juice, sugar, and chili peppers in a small bowl.
Heat coconut oil in a wok or large skillet over medium-high heat until shimmering.
Add garlic and ginger; cook for 30 seconds until fragrant.
Add diced red onion; stir-fry for 2 minutes until softened and translucent.
Add ground turkey and break it into small pieces with a wooden spoon. Cook for 5–7 minutes, stirring frequently, until the meat is cooked through and crumbly with no pink remaining.
Add optional diced bell pepper or other vegetables; stir-fry for 2 minutes until just tender.
Pour in the fish sauce mixture and stir well to coat all ingredients. Cook for 1 minute until the sauce is absorbed and fragrant.
Remove from heat. Stir in the chopped Thai basil just before serving so it stays fresh and bright.
Serve warm over jasmine rice, with rice noodles, or in lettuce cups as desired.
