Three Bean Chili
A thick, spiced chili built from three varieties of beans simmered with tomatoes and aromatics. The long braise melds flavors into a cohesive, warming stew with tender beans.

Dice the onion, mince the garlic, and dice the celery.
Heat olive oil in a large pot over medium heat. Add onion, garlic, and celery; cook for 5 minutes until softened.
Stir in chili powder, cumin, and oregano; cook for 1 minute until fragrant.
Add canned tomatoes, all three beans, and vegetable broth. Bring to a simmer.
Reduce heat to low and simmer uncovered for 30–35 minutes, stirring occasionally, until the chili thickens and flavors meld.
Season to taste with salt and black pepper.
Ladle into bowls and serve hot.
