Tiramisu

In a large bowl, whisk together softened cream cheese and sugar until light and fluffy, about 2 minutes.
Add egg yolks and vanilla extract to the cream mixture; whisk until fully combined and smooth.
In a separate bowl, whisk egg whites to stiff peaks; gently fold into the cream mixture in two additions until no white streaks remain.
Combine cooled brewed coffee and coffee liqueur (if using) in a shallow dish.
Quickly dip each ladyfinger into the coffee mixture for 1–2 seconds per side (do not oversoak) and arrange in a single layer on the bottom of a 9x13 baking dish.
Spread half of the cream mixture evenly over the first layer of dipped ladyfingers.
Repeat with another layer of dipped ladyfingers and top with remaining cream mixture, smoothing the surface.
Cover with plastic wrap and refrigerate for at least 6 hours or overnight to allow flavors to meld.
Just before serving, dust the top generously with cocoa powder and grated chocolate if using; serve cold.
