Panna Cotta

Pour cold water into a small bowl and sprinkle gelatin evenly over it. Let bloom for 5 minutes until softened.
In a small saucepan, gently heat heavy cream, milk, and sugar over low heat, stirring occasionally, until sugar dissolves and mixture is hot (do not boil). Remove from heat.
Add bloomed gelatin to the warm cream mixture and whisk until gelatin is completely dissolved. Stir in vanilla extract and your chosen flavor infusion (citrus juice/zest, liqueur, honey, or other flavoring).
Strain the mixture through a fine-mesh strainer to remove any lumps or zest particles, pouring into a measuring cup or pitcher.
Divide the mixture evenly among four ramekins or serving glasses. Refrigerate for at least 4 hours, or overnight, until set and lightly wobbling when gently shaken.
Top each panna cotta with your choice of garnish: fresh or poached fruit, nuts, fruit sauce, jam, or candied citrus. Serve chilled.
