Dice the onion, celery, and garlic. If using fresh bell pepper or other vegetables, prep them now.
Heat olive oil in a large pot over medium-high heat. Add ground turkey and cook, breaking it apart with a spoon, until browned, about 5–7 minutes. Drain excess fat if needed.
Add diced onion, celery, and garlic to the pot. Sauté for 3–4 minutes until softened and fragrant.
Stir in tomato paste and cook for 1 minute to deepen the flavor.
Add canned tomatoes (with juices), vegetable broth, chili powder, cumin, oregano, and any optional vegetables. Stir to combine.
Bring to a boil, then reduce heat to low. Add drained beans and hot sauce if using. Stir well.
Simmer uncovered for 30–40 minutes, stirring occasionally, until flavors meld and the chili thickens to your preference. The longer it simmers, the thicker it becomes.
Taste and adjust seasonings with salt, black pepper, additional chili powder, or hot sauce. Serve hot with desired toppings.
