Turkey Meatball Meal Prep
Ground turkey meatballs bound with breadcrumbs and egg, seasoned with herbs and spices. Baked or pan-seared, then paired with a choice of sauce and base for mix-and-match meal assembly.
Ingredients
Method
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine ground turkey, breadcrumbs, egg, minced garlic, parmesan, Italian seasoning, salt, and black pepper. Mix gently with a fork until just combined; do not overwork.
Form the mixture into 16 meatballs (about 1.5 oz each) and arrange on the prepared baking sheet. Lightly brush or drizzle with olive oil.
Bake for 20–25 minutes until meatballs are cooked through and lightly browned (internal temp 165°F).
While meatballs cook, prepare your chosen grain or pasta base and vegetable side according to package directions; warm your chosen sauce.
Divide cooked grain/pasta among 2–4 containers or bowls. Top with warm meatballs, sauce, and cooked vegetables. Mix gently to combine.
Serve warm or store in airtight containers for meal-prep throughout the week.
