Bacon Egg and Cheese Burrito
A flour tortilla wrap filled with bacon, scrambled eggs, and melted cheese. The tortilla is warmed and wrapped around the warm filling for an assembled handheld breakfast.
Ingredients
Method
Cook bacon slices in a skillet over medium heat until crisp, about 5 minutes. Remove and let cool, then chop into bite-sized pieces.
In the same skillet, melt butter over medium heat. Pour in beaten eggs, add salt and pepper, and scramble until soft-set, about 2–3 minutes.
Remove skillet from heat. Fold the chopped bacon and shredded cheese into the eggs.
Warm the flour tortilla in the skillet for 10 seconds per side until pliable.
Place the egg-bacon-cheese mixture in the center of the tortilla. Fold in the sides and roll tightly, keeping the seam tucked underneath.
Serve the burrito warm, whole or wrapped in foil for handheld eating.
