A warm grain base topped with roasted vegetables, plant or animal protein, and a finishing sauce. Build-your-own format with swappable grains, proteins, vegetables, and dressings.
Ingredients
Method
Bring water or vegetable broth to a boil in a medium pot. Add grain and salt, then reduce heat to low. Simmer covered until tender, 20–30 minutes depending on grain choice. Drain any excess liquid.
Toss cubed roasted vegetable with olive oil and salt on a sheet pan. Roast at 400°F for 20–25 minutes until caramelized, stirring halfway through.
Wilt secondary greens lightly if using fresh spinach; set aside raw or sauté for 1 minute over medium heat.
If using tempeh or tofu, crumble and pan-sauté over medium-high heat in 1 tbsp oil until golden, about 5 minutes. Season with salt and pepper. (Skip if using egg whites, pre-cooked salmon, or legumes.)
Place cooked grain in a bowl. Top with roasted vegetable, wilted greens, fresh vegetable, and warm protein.
Drizzle with dressing, scatter seed or nut garnish and fresh herb over the top. Serve warm.
