Method

1

Cut the starchy vegetable into ½-inch cubes. Dice the onion, bell pepper, mushroom, and zucchini into similar-sized pieces for even cooking. If using bacon, cook until crispy, then crumble; if using sausage or ham, dice and set aside.

2

Heat the cooking fat in a large skillet over medium-high heat. Add the diced starchy vegetable and cook for 5–7 minutes, stirring occasionally, until it begins to soften and brown at the edges.

3

Add the onion to the skillet and cook for 2 minutes until softened. Then add the remaining vegetables (bell pepper, mushroom, zucchini) and cook for 5–7 minutes, stirring every minute or two, until all vegetables are tender and the hash develops golden-brown, crispy edges.

4

Stir in the cooked protein and optional seasoning blend. Cook for 1–2 minutes to warm through. Taste and adjust salt and pepper as needed.

5

Transfer the hash to a serving plate or bowl. Garnish with fresh parsley or green onions. Serve immediately, optionally topped with a fried egg, avocado, cheese, or a dollop of sour cream.
