Breakfast Sausage Scramble
A skillet scramble of eggs, pork sausage, and sautéed vegetables served warm. Cooked on the stovetop in one pan for quick assembly.

Method
Dice the onion and bell pepper. Chop the fresh spinach. Mince the garlic. In a small bowl, whisk together the eggs with salt and black pepper.
Heat a large skillet over medium-high heat. Add the pork sausage and cook, breaking it into small pieces as it browns, until no pink remains, about 5–7 minutes. Transfer to a plate.
In the same skillet, melt the butter over medium heat. Add the onion, bell pepper, and garlic; sauté for 3–4 minutes until softened. Stir in the spinach and cook until wilted, about 1 minute.
Return the cooked sausage to the skillet. Pour in the whisked eggs and stir gently with a spatula, pushing cooked egg from the edges toward the center, until the eggs are set but still slightly moist, about 3–4 minutes.
Divide the scramble among plates. Top with shredded cheese if desired and serve immediately.
