Breakfast Skillet
A one-pan breakfast combining eggs, protein, and vegetables cooked together until crispy and browned. Served hot with optional toppings for customization across many ingredient combinations.

Peel and dice the potato into 1/2-inch cubes. Dice the onion and bell pepper into similar-sized pieces. If using raw meat, dice or crumble it into bite-sized pieces.
Heat butter or oil in a 10–12 inch skillet over medium-high heat until shimmering.
Add the diced potato and onion. Cook, stirring occasionally, for 8–10 minutes until the potatoes are golden and tender.
Add the diced bell pepper and protein (if using raw). Cook for 3–4 minutes, stirring, until the pepper softens and any raw meat is cooked through.
Pour the whisked eggs over the vegetables and protein. Stir gently and cook for 2–3 minutes until the eggs begin to set.
Stop stirring. Let the mixture cook undisturbed for another 2–3 minutes until the eggs are set but still moist. Tilt the pan occasionally to let uncooked egg run to the edges.
Sprinkle cheese over the top (if using) and allow it to melt for 1 minute. Season with salt and black pepper to taste.
Slide onto a plate or serve directly from the skillet. Garnish with fresh herbs if desired.
