Shred the lettuce, dice the tomato and onion, and measure out all other ingredients into small bowls for easy assembly.
In a skillet over medium-high heat, cook your chosen protein until done, seasoning with taco seasoning if desired; set aside.
Warm the beans and rice separately in the skillet or in a pot, stirring occasionally, until heated through about 5 minutes total.
Warm the tortillas in a skillet for 30 seconds per side or directly over a gas flame to make them pliable.
Lay a warm tortilla flat; arrange rice and beans down the center, leaving 2 inches on each end.
Top with cooked protein, cheese, lettuce, tomato, onion, and a spoonful each of salsa and sour cream.
Fold the left and right sides of the tortilla inward over the filling, then roll tightly from the bottom up, tucking the filling as you go.
Repeat with the second tortilla; serve immediately or wrap in foil to keep warm.
