Caesar Pasta Salad
Chilled pasta salad dressed with creamy caesar dressing, romaine lettuce, and parmesan cheese. Toss cooked pasta with vegetables and dressing, chill until cold, and serve as a side or light main.
Ingredients
Method
Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8–10 minutes. Drain and rinse with cold water until cooled, then transfer to a large bowl.
While pasta cools, chop romaine lettuce, halve cherry tomatoes, dice cucumber, and thinly slice red onion.
Add cooled pasta, chopped lettuce, tomatoes, cucumber, and red onion to the bowl.
In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and black pepper. Pour over pasta mixture along with caesar dressing.
Toss until evenly coated. Top with shredded or shaved parmesan cheese and toss gently to combine.
Chill for at least 30 minutes before serving. Adjust seasoning to taste.
