Chia Seed Pudding Parfait

Method
In a small bowl, whisk together chia seeds, coconut milk, vanilla extract, and maple syrup until well combined; stir vigorously to prevent seed clumping.
Let the mixture rest for 5 minutes, then stir again to distribute seeds evenly. Cover and refrigerate for at least 30 minutes or up to overnight until thickened.
Divide the thickened chia pudding between two serving glasses, filling each about halfway.
Layer the primary fresh fruit on top of the pudding in each glass.
Add the secondary fruit if using, distributing evenly.
Top each parfait with granola, nuts or seeds, and coconut flakes just before serving to maintain crunch.
Serve immediately while the pudding is chilled and the toppings are crisp.
