Method
Slice tomato and red onion into thin rounds. Chop parsley. Have all toppings and chimichurri ready before grilling.
Heat grill or skillet to medium-high. Score sausage links lightly with a knife to prevent bursting.
Grill sausage for 10–12 minutes, turning occasionally, until browned and cooked through (internal temperature 160°F).
Brush cut sides of bread with olive oil. Grill or toast cut-side down for 1–2 minutes until lightly browned.
