Turnip Greens

Remove tough stems from turnip greens and discard. Roughly chop the leaves. Dice the onion and mince the garlic.
Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened, about 3 minutes.
Stir in minced garlic and cook for 30 seconds until fragrant. If using bacon, add crispy pieces now.
Add chopped turnip greens in batches, stirring to wilt them down, about 2–3 minutes.
Pour in vegetable broth and bring to a simmer. Reduce heat to low, cover, and braise for 30–40 minutes until greens are very tender.
Season with salt, black pepper, and red pepper flakes if desired. Stir in apple cider vinegar if using.
Serve warm, with braising liquid spooned over top. Optional: drizzle with hot sauce or top with a fried egg.
