Cottage Cheese Pancakes

In a blender, combine cottage cheese, eggs, and optional honey; blend until smooth, about 30 seconds.
In a separate bowl, whisk together flour, baking powder, and salt.
Fold dry ingredients into wet mixture until just combined; do not overmix. Fold in blueberries or other fruit if using.
Heat butter on a griddle or non-stick skillet over medium-high heat until shimmering.
Working in batches, pour 1/4-cup portions of batter onto the griddle, spacing them 2 inches apart.
Cook for 2–3 minutes until the bottom is golden and edges look set; flip carefully and cook the other side for 1–2 minutes until light brown.
Transfer cooked pancakes to a plate and keep warm; repeat with remaining batter.
