Pound chicken breasts to an even 3/4-inch thickness. Pat dry with paper towels.
Mix flour, paprika, garlic powder, salt, and black pepper in a shallow bowl.
Beat eggs in another shallow bowl. Dip each chicken piece in egg, then dredge in seasoned flour, coating both sides evenly.
Preheat air fryer to 380°F. Lightly spray the air-fryer basket with oil.
Arrange chicken pieces in a single layer in the basket. Spray lightly with oil. Air fry for 12 to 15 minutes, until golden brown and internal temperature reaches 165°F.
Toast bread slices lightly if desired. Spread mayonnaise on both slices.
Layer lettuce, tomato slice, red onion, and pickles on the bottom bread slice.
Place fried chicken on top of vegetables. Cap with the top bread slice. Serve immediately.
