Preheat the oven to 425°F (220°C). In a mixing bowl, whisk together the eggs, cream, salt, and pepper until well combined and light.
Heat olive oil in a 10-inch oven-safe skillet over medium heat. Sauté the onion until softened, about 3 minutes.
Add the selected vegetables and cook, stirring occasionally, until tender and any excess moisture has evaporated, 5–8 minutes. If using bacon or sausage, add it now; stir to combine.
Scatter the cheese evenly over the vegetables.
Pour the egg mixture over the vegetables and cheese, stirring gently to distribute. Let it cook on the stovetop over medium heat for 2–3 minutes, until the edges begin to set.
Transfer the skillet to the oven and bake for 12–15 minutes, until the center is just set and the top is golden brown.
Remove from the oven and let cool for 2 minutes. Sprinkle with fresh herbs if desired, slice into wedges, and serve warm or at room temperature.
