Grinder Sandwich
A pressed sandwich on Italian bread layered with cured or cooked meat, cheese, and vegetables. The bread is toasted and fillings are warmed through with optional condiments and oils.

Slice the Italian bread horizontally and lightly brush or rub the cut faces with olive oil.
Spread the chosen condiment evenly on both bread halves.
Layer meat, cheese, tomato slices, lettuce, and red onion on the bottom bread half in that order.
Top with the upper bread half, pressing gently to compress the sandwich.
Heat a panini press or cast-iron skillet over medium-high heat. Place the assembled sandwich on the press or in the skillet.
Press down firmly (or weight the skillet) for 3–4 minutes until the bread is golden and crispy and the cheese begins to soften.
Flip carefully and press or cook the other side for 2–3 minutes until evenly golden.
Remove from heat, slice in half diagonally if desired, and serve immediately while warm.
