Guava Pastelitos

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Cut each flour tortilla into 3-inch squares (you should get 4–6 squares per tortilla, totaling approximately 24 squares for 12 pastelitos; reserve extras for patching or discarding). Alternatively, cut phyllo dough into 3-inch squares.
Lay out a tortilla square. Place 1 teaspoon of guava paste and 1 teaspoon of cheese filling (cream cheese, queso fresco, or cottage cheese) in the center, leaving a 0.5-inch border.
Fold the square diagonally in half to form a triangle, pressing edges gently to seal. If needed, wet the edge lightly with water to help seal. Place on prepared baking sheet.
Repeat with remaining tortilla squares, guava, and cheese until you have 12 pastelitos.
Brush the top of each pastelito lightly with melted butter or coconut oil.
Bake for 15–20 minutes until golden brown and crispy, rotating the baking sheet halfway through if needed.
Remove from oven. While warm, dust lightly with cinnamon (or cardamom), powdered sugar, or honey glaze, and a pinch of sea salt if desired.
Cool on baking sheet for 5 minutes before serving. Pastelitos are best enjoyed warm.
