Italian Sausage & Peppers
Browned Italian sausage cooked with bell peppers, onions, and tomatoes in a savory sauce. Served over pasta, polenta, or bread for a one-pan weeknight meal.

Core and slice the bell peppers into 0.5-inch-wide strips. Slice the onions into half-moons. Mince the garlic.
Heat the olive oil in a large skillet over medium-high heat. Add the sausage, breaking it into bite-sized pieces with a wooden spoon, and cook until browned and no longer pink, 8–10 minutes. Transfer to a plate.
In the same skillet, add the sliced onions and peppers. Cook, stirring occasionally, until softened and lightly browned, 6–8 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
Return the browned sausage to the skillet. Pour in the canned tomatoes with their juice. Add the Italian seasoning, salt, black pepper, and red pepper flakes. Stir to combine.
Reduce heat to medium-low and simmer uncovered for 15–20 minutes, stirring occasionally, until the sauce thickens and flavors meld. Taste and adjust seasoning as needed.
Transfer to a serving dish or plate over your choice of pasta, polenta, or crusty bread. Top with grated Parmesan and fresh parsley.
