Jerk-Spiced Grain Bowl

Method
Cook grain base according to package directions (or use leftover cooked grain); set aside and keep warm.
Pat protein dry and toss with jerk seasoning and lime juice in a bowl; let sit 10 minutes.
Toss roasted vegetables #1 and #2 with 2 tbsp olive oil, salt, and pepper on a sheet pan.
Roast vegetables at 425°F for 20–25 minutes until tender and lightly caramelized.
Meanwhile, heat 1 tbsp olive oil in a skillet over medium-high heat; cook seasoned protein 8–12 minutes (or to internal temperature) until cooked through, stirring occasionally.
