Marry Me Chicken

Pat chicken breasts dry with paper towels. Pound gently to even 3/4-inch thickness. Season both sides generously with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Once shimmering, add chicken and sear 6–7 minutes per side until golden and internal temperature reaches 165°F. Transfer to a plate to rest.
In the same skillet, reduce heat to medium. Add minced garlic and sliced shallot; cook 2–3 minutes until softened and fragrant.
Pour in canned tomatoes, chicken broth, sun-dried tomatoes, and any juices from the resting chicken. Bring to a gentle simmer and cook 5 minutes, stirring occasionally.
Stir in heavy cream and grated Parmesan cheese. Simmer 2–3 minutes more, stirring until cheese melts and sauce thickens slightly. Do not boil.
Return chicken to the skillet, nestling it into the sauce. Stir in lemon juice and fresh basil. Taste and adjust seasoning with salt and pepper.
Spoon chicken and sauce onto serving plates. Serve with pasta, rice, polenta, or crusty bread to catch the sauce.
