Ingredients
Method
Pat shrimp dry with paper towels and season with salt and black pepper.
Bring a large pot of salted water to a boil for pasta; cook according to package directions until al dente.
Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering.
Add shrimp in a single layer and cook 2 minutes per side until pink and cooked through; transfer to a plate.
Add remaining 1 tbsp oil to the skillet over medium heat; add minced garlic and sliced red onion, sauté for 2 minutes until fragrant.
Pour in crushed canned tomatoes and stir to combine; simmer for 3 minutes.
Reduce heat to low and stir in heavy cream and lemon juice; cook for 1 minute until sauce is warm and combined.
Return shrimp to the skillet, add red pepper flakes, and stir gently; cook for 1 minute to heat through.
Drain cooked pasta and divide between two bowls or plates.
Spoon shrimp and sauce over pasta; garnish with fresh chopped parsley and serve immediately.
