Mediterranean Lamb Meatballs
Ground lamb meatballs seasoned with herbs, garlic, and Mediterranean spices, baked until firm. Served with yogurt sauce and fresh vegetables or grains.
Ingredients
Method
Preheat oven to 400°F. Line a baking sheet with parchment paper and lightly brush with olive oil.
In a large mixing bowl, combine ground lamb, minced onion, minced garlic, parsley, oregano, paprika, cumin, beaten egg, breadcrumbs, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overwork the mixture.
Shape mixture into 16 meatballs, about 1.5 inches in diameter. Arrange on the prepared baking sheet, spacing them evenly.
Bake for 20–25 minutes, until meatballs are cooked through and lightly browned (internal temperature 160°F).
While meatballs bake, prepare yogurt sauce by whisking together yogurt, lemon juice, and a pinch of salt.
Serve meatballs warm with yogurt sauce, diced cucumber, and fresh mint. Pair with rice, pita bread, or roasted vegetables as desired.
