Miso Salmon Traybake
Sheet pan salmon glazed with miso and served alongside roasted vegetables. Baked until the fish is cooked through and vegetables are caramelized.

Method
Preheat oven to 400°F. Line a large sheet pan with parchment paper.
In a small bowl, whisk together miso paste, honey, rice vinegar, minced ginger, minced garlic, and sesame oil until smooth.
Toss the cut root vegetable, cruciferous vegetable, summer squash, and allium vegetable with olive oil, salt, and black pepper on the sheet pan. Spread in a single layer.
Roast vegetables for 12 minutes in the preheated oven.
Remove sheet pan from oven. Push vegetables to the sides and arrange salmon fillets skin-side down in the center. Brush the glaze evenly over the salmon.
Return to oven and bake for 8–10 minutes, until salmon is opaque and flakes easily with a fork.
Garnish with sesame seeds and sliced green onion. Serve hot from the pan.
