Peanut Butter Cup Brownies
Fudgy chocolate brownies layered with peanut butter filling and topped with a chocolate cup. Rich, dense, and baked until set.
Ingredients
Method
Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper.
Whisk together all-purpose flour, cocoa powder, baking powder, and salt in a small bowl.
In a large bowl, combine melted butter and sugar. Whisk until combined.
Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
Fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
Pour batter into prepared pan and smooth the top.
In a small bowl, mix peanut butter and powdered sugar until uniform.
Dollop peanut butter mixture over the brownie batter and swirl lightly with a fork or knife.
Bake for 28–32 minutes, until a toothpick inserted into the brownie (not the peanut butter layer) comes out with a few moist crumbs.
While brownies bake, combine chopped dark chocolate and 1 tbsp butter in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until melted and smooth.
Remove brownies from oven. Immediately pour melted chocolate over the top and spread evenly.
Allow brownies to cool completely in the pan on a wire rack, at least 1 hour. Cut into 16 squares.
