Sicilian Pizza
Thick-crust rectangular pizza with tomato sauce, cheese, and swappable toppings baked until golden. Crispy exterior and soft, airy interior assembled on a sheet pan.

Method
Combine warm water, yeast, and 1 tbsp sugar in a bowl; let sit 5 minutes until foamy.
Mix flour and salt in a large bowl. Add yeast mixture and 3 tbsp olive oil; knead until smooth and elastic, about 8–10 minutes by machine or hand.
Place dough in an oiled bowl, cover with plastic wrap, and let rise 1 hour until doubled.
While dough rises, slice onion and bell pepper thin, mince garlic, and crumble sausage into small pieces.
Oil a 9×13 inch sheet pan. Stretch dough to fill the pan; let rest 15 minutes.
Spread 1.5 cups marinara evenly over dough, leaving a 0.5 inch border.
Scatter crumbled sausage, onion, bell pepper, and minced garlic over sauce. Sprinkle oregano and black pepper. Top with 2 cups mozzarella.
Let topped pizza rest 15 minutes. Preheat oven to 450°F.
Bake 20–25 minutes until crust is golden and cheese is bubbly and lightly browned.
Remove from oven, sprinkle with 0.5 cup grated Parmesan, and let rest 5 minutes before serving.
