Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
Beat in egg and vanilla extract until fully incorporated.
In a separate bowl, whisk together flour, baking powder, and salt.
Add dry ingredients to wet ingredients and mix until just combined; do not overmix.
Scoop dough into 1-tablespoon balls and place 2 inches apart on prepared baking sheets.
If desired, flatten slightly with the bottom of a glass and sprinkle with powdered sugar or sesame seeds.
Bake for 10–12 minutes, until edges are set and lightly golden but centers still appear underbaked.
Transfer baking sheets to a wire rack and let cookies cool on the pan for 2 minutes, then move to a cooling rack.
