Sweet and Sour Pork
Stir-fried pork with tangy sweet-and-sour sauce, bell peppers, and onions. Meat and vegetables cook quickly over high heat, coated in a glossy sauce.

Cut pork into 1-inch cubes. Chop bell peppers and onion into 1-inch pieces. Mince garlic and ginger. Have pineapple chunks ready.
In a small bowl, whisk together ketchup, rice vinegar, sugar, soy sauce, and minced garlic and ginger. Set aside.
In another small bowl, mix cornstarch with 2 tbsp water until smooth. Set aside.
Heat oil in a wok or large skillet over high heat until shimmering. Add pork and cook, stirring frequently, until browned on all sides, about 5–7 minutes. Transfer to a plate.
Add bell peppers and onion to the same pan. Stir-fry over high heat for 3–4 minutes until just beginning to soften. Return pork to the pan.
Pour the sweet-and-sour sauce over the pork and vegetables. Add pineapple chunks. Stir well and bring to a simmer.
Stir the cornstarch slurry and pour into the pan while stirring constantly. Simmer for 1–2 minutes until sauce thickens and coats the pork and vegetables in a glossy finish.
Transfer to a serving dish and serve hot over steamed rice or noodles.
