Thai Basil Pork Stir-Fry
A stir-fried pork dish with Thai basil, garlic, and chiles, cooked quickly over high heat. Served over jasmine rice or noodles with swappable proteins and vegetables.
Ingredients
Method
Cut the pork into 1-inch pieces or thin strips. Prepare the vegetables by slicing or chopping into bite-sized pieces.
Mince the garlic and ginger. Slice the green onions, separating white parts from green tops. Have the basil ready.
In a small bowl, whisk together fish sauce, lime juice, and sugar until the sugar dissolves. Set aside.
Heat the oil in a large wok or skillet over high heat until shimmering. Add the pork and cook, stirring frequently, until light brown on the outside, about 3–4 minutes. Transfer to a plate.
Add garlic, ginger, and chiles to the same pan; stir constantly for 30 seconds until fragrant.
Return the pork to the pan. Add the vegetables and the white parts of the green onions. Stir-fry for 2–3 minutes, until vegetables are tender-crisp.
Pour the sauce over the mixture and toss well, cooking for 30 seconds more until the sauce coats everything and the pork is heated through.
Remove from heat. Fold in the fresh basil and scatter the green tops of the green onions over the top.
Divide the rice or noodles among bowls and top with the stir-fry.
