Thai Basil Shrimp Stir-Fry

Peel and devein shrimp if needed. Mince garlic and slice red onion thin. Slice bell pepper into strips. Pack basil and cut green onions into 1-inch pieces.
In a small bowl, whisk together fish sauce, lime juice, and sugar.
Heat coconut oil in a wok or large skillet over high heat until shimmering, about 1 minute.
Add garlic and red chili flakes; cook for 30 seconds until fragrant.
Add shrimp and cook, stirring frequently, until they begin to turn pink, about 2–3 minutes.
Add red onion and bell pepper; stir-fry for 2 minutes until vegetables soften slightly and shrimp are fully cooked through.
Pour the fish sauce mixture over the stir-fry and toss to coat. Remove from heat and fold in fresh basil.
Divide into bowls or plates and top with green onions. Serve immediately.
