Crispy, golden fried cornmeal fritters with customizable mix-ins and seasonings. A classic Southern snack that's tender inside and crunchy outside, perfect served hot with your choice of sauce.

In a large mixing bowl, whisk together cornmeal, all-purpose flour, baking powder, salt, and paprika.
In another bowl, whisk together the egg and buttermilk until well combined.
Pour the wet mixture into the dry ingredients and stir until just combined. Fold in diced onion, corn kernels, jalapeño, and green onion until evenly distributed. Let batter rest for 5 minutes.
Heat oil in a deep pot or Dutch oven to 350°F (175°C), using a thermometer to monitor temperature.
Carefully drop rounded tablespoon-sized portions of batter into the hot oil, working in batches to avoid crowding (about 6–8 pieces per batch). Do not overcrowd the pan.
Fry for 2–3 minutes until golden brown and crispy, turning once or twice for even cooking. Use a slotted spoon to transfer to a paper towel–lined plate to drain.
Repeat with remaining batter, maintaining oil temperature between batches.
Serve hot, immediately after frying, with cocktail sauce, tartar sauce, or your choice of dipping sauce.
