Creamed Spinach
A classic, versatile side dish of tender greens simmered in a rich, creamy sauce. Swap the base green, protein, grain, or sauce to create endless flavor variations.

Method
Wash and roughly chop the spinach (or other base green). Finely dice the onion and mince the garlic.
Melt butter in a large skillet over medium heat. Add diced onion and sauté until softened, about 3 minutes.
Stir in minced garlic and cook for 30 seconds until fragrant.
Add the chopped greens in batches, stirring frequently, until wilted and any excess moisture has evaporated, about 5–7 minutes.
Pour in the cream and stir well. Bring to a gentle simmer over medium-low heat.
Remove from heat and stir in grated cheese until fully melted and smooth. Season with nutmeg, salt, and pepper to taste.
Transfer to a serving dish and serve warm as a side dish or over grain, pasta, or protein of choice.
