Bring a large pot of salted water to a boil. Prepare your protein if not already cooked; have vegetables julienned or chopped and ready.
In a small bowl, whisk together tahini, soy sauce, rice vinegar, chili oil, minced garlic, ginger, and sugar until combined.
Slowly whisk in vegetable broth until the sauce reaches a pourable consistency; it should coat a spoon but flow easily. Taste and adjust seasonings.
Cook noodles according to package directions until al dente. Drain in a colander and rinse briefly with cool water to stop cooking.
