Lobster Roll

If using whole lobster, cool completely and extract meat; remove any shell fragments. Dice lobster meat into bite-sized chunks, keeping some larger pieces for texture.
Finely dice celery, thinly slice green onion, and finely chop fresh tarragon or herb of choice.
In a bowl, combine mayonnaise (or sauce base), fresh lemon juice, salt, and pepper. Gently fold in lobster meat, celery, green onion, and tarragon until evenly coated; do not overmix.
Toast the rolls until golden and lightly crispy, using butter in a skillet or toaster oven, about 2–3 minutes per side.
If desired, line the inside of each toasted roll with a leaf or two of butter lettuce or greens.
Divide the lobster salad evenly between the two toasted rolls, mounding it gently in the center. Serve immediately with cocktail sauce, lemon wedges, or additional seasoning on the side.
