Marinara Turkey Meatball Sub
Ground turkey meatballs bound with breadcrumbs and egg, simmered in marinara sauce and served on a toasted sub roll. Meatballs are baked until firm, then finished in sauce for a warm, soft sandwich.

Preheat oven to 400°F (200°C).
In a large mixing bowl, combine ground turkey, breadcrumbs, beaten egg, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper. Mix gently with your hands until just combined—do not overmix.
Form the mixture into 12–16 meatballs (about 1.5 inches each) and place them on a lightly oiled baking sheet, spaced about 2 inches apart.
Bake for 18–20 minutes, or until the internal temperature reaches 165°F when tested with an instant-read thermometer.
Remove meatballs from the oven and transfer them to a large pot or skillet. Pour marinara sauce over the meatballs and stir gently to coat. Simmer over medium heat for 10 minutes.
Toast the sub rolls cut-side up until lightly golden, about 2–3 minutes.
Place 3–4 meatballs on each toasted roll, spoon sauce over them, and top with shredded mozzarella cheese.
If desired, return assembled sandwiches to the oven for 2–3 minutes to melt the cheese, or serve immediately topped with fresh parsley.
