Maple Pecan Oat Cookies

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2 minutes.
Add the maple syrup, egg, and vanilla extract to the butter mixture and stir until combined.
In a separate bowl, whisk together the flour, rolled oats, baking powder, baking soda, salt, and cinnamon.
Fold the dry ingredients into the wet ingredients until just combined, then fold in the chopped pecans.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10–12 minutes, until the edges are golden and the centers are set but still slightly soft.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
