Matcha Cookies
Tender green tea cookies made with matcha powder, butter, and sugar. Baked until lightly crisp at the edges with a soft, cake-like center.

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Sift together flour, matcha powder, baking powder, and salt in a small bowl.
In a large bowl, whisk together softened butter and sugar until light and fluffy, about 2 minutes.
Add egg and vanilla extract to butter mixture; whisk until combined.
Fold in flour mixture until just combined; do not overmix.
Drop rounded tablespoon-sized portions of dough onto prepared baking sheets, spacing 2 inches apart.
If using sesame seed topping, sprinkle lightly over each cookie before baking.
Bake for 10–12 minutes until edges are set but center remains soft.
Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Dust lightly with powdered sugar if desired before serving.
