Arrange your chosen protein on one slice of bread, then layer with cheese slice. Top with drained sauerkraut and pickle slices, then spread the second bread slice with thousand island dressing and place it on top to close the sandwich.
Heat a skillet or griddle over medium heat and add half the butter, allowing it to melt and coat the cooking surface evenly.
Place the assembled sandwich on the hot griddle and cook for 3–4 minutes until the bread is golden brown and crispy, pressing gently with a spatula to help the cheese melt and the sandwich compress slightly.
Add the remaining butter to the pan, then carefully flip the sandwich using a wide spatula and cook the other side for another 2–3 minutes until it reaches the same golden-brown color and the cheese is fully melted.
Transfer the hot sandwich to a plate, slice it diagonally if desired, and serve immediately with additional pickles or a small side of extra sauerkraut.
