Thai Beef Salad

Heat a grill or skillet over medium-high heat. Season the beef with salt and pepper, then cook for 3–5 minutes per side until medium-rare, depending on thickness. Remove to a cutting board and let rest for 2 minutes, then slice or cube into bite-sized pieces.
In a small bowl, whisk together lime juice, fish sauce, minced garlic, ginger, red chili, and sugar until sugar dissolves. Taste and adjust seasoning as needed.
In a large bowl, combine the greens, cucumber, red onion, bell pepper, and cherry tomatoes. Toss gently with half the dressing.
Top the salad with the warm cooked beef. Drizzle with remaining dressing, then scatter with cilantro, green onion, and toasted sesame seeds. Serve immediately.
