Turkey Sweet Potato Bowl
A grain or rice bowl layered with roasted turkey breast, sweet potato, and seasonal vegetables. Served warm with a choice of sauce and fresh toppings.

Preheat oven to 425°F (220°C). Cut turkey into 1-inch cubes or thin slices. Cut sweet potato into ¾-inch cubes. Prepare the seasonal vegetable (broccoli into florets, Brussels sprouts halved, or bell pepper into chunks).
Toss turkey with 1 tbsp oil, salt, and pepper on one portion of a sheet pan. Toss sweet potato and seasonal vegetable with remaining 2 tbsp oil, salt, and pepper on another portion. Spread in a single layer.
Roast for 30–35 minutes, stirring halfway through, until turkey reaches 165°F (74°C) internally and vegetables are tender and lightly caramelized.
Divide cooked grain evenly among four bowls. Top each with roasted turkey, sweet potato, and seasonal vegetable.
Drizzle with sauce. Garnish with fresh herbs, green onion, and seeds or nuts. Serve warm.
