Peel and halve the cucumber lengthwise. Scoop out the seeds with a spoon and discard. Grate the cucumber on a box grater or with a food processor.
Transfer grated cucumber to a clean kitchen towel or cheesecloth. Squeeze firmly to remove excess moisture (this prevents a watery dip).
Mince the garlic cloves finely. Chop the fresh dill and mint.
In a mixing bowl, combine the Greek yogurt, squeezed cucumber, minced garlic, lemon juice, dill, and mint. Stir until well blended.
Season to taste with salt and black pepper. Transfer to a serving bowl.
