Unstuffed Pepper Bowl
A deconstructed pepper bowl with roasted vegetables, protein, and grain base. Components are mixed and customized by swapping vegetables, proteins, and finishing sauces.

Cut bell peppers, red onion, and zucchini into 1-inch pieces. Mince garlic.
Bring vegetable broth to a boil in a saucepan. Add rice, stir, reduce heat to low, cover, and simmer 18 minutes until liquid is absorbed. Remove from heat and let rest 5 minutes, then fluff with a fork.
Toss diced bell pepper, onion, and zucchini with 2 tbsp olive oil, salt, and pepper on a sheet pan. Roast at 425°F for 25–30 minutes, stirring halfway through, until edges brown.
Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground turkey and minced garlic. Cook 6–8 minutes, breaking meat into small crumbles, until browned. Drain excess fat.
Stir paprika, oregano, salt, and black pepper into cooked turkey. Cook 1 minute more to bloom spices.
Divide cooked rice between two bowls. Top each with roasted vegetables, seasoned turkey, and Parmesan cheese.
Drizzle with marinara sauce or chosen finishing sauce. Garnish with fresh parsley and serve warm.
